If you’re sorta familiar with my blog, then you’ll know that I’m not a kale and chia seed eating, green smoothie chuggin kinda blogger. I like chocolate, macdonalds and bread way tooooo much to cheat on them for something green and yucky. I’ve tried them before because they’re trendy and make for good instagram pictures but ehhhh, noooooo way jose. VOMIT. I don’t go running as much as I should (thats being VERY nice) I don’t do pilates or soul cycle. But I probably should though the thought of running makes me wanna cry. I play volleyball competitively, year round. I go to the gym sometimes, I do yoga because it makes my back feel better. But I am in no way your token green juice, salad only eating kinda blogger. Is this me confessing to saying my gym and food new years resolutions have gone out the window? Perhaps. Is it my wicked intro to my chocolate muffins? Maybe.
Chocolate Chocolate Muffins recipe from call me cupcake.
2 1/2 cups o flour
3/4 cups o cocoa powder
1 tbsp o baking powder
1/2 tsp o baking soda
1/4 tsp o salt
1 1/2 cups o sugar
1 stick o melted butta
1 cup o butter milk… i used milk with lemon because i was out of buttermilk.
2 big eggs
1 cup of chopped chocolate. i used half semi sweet, half milk chocolate.
Set the oven @ 392. Butter and dust a cupcake pan. or use cupcake papers.
Mix the flour, cocoa powder, baking soda, baking powder and salt in one bowl.
mix the eggs, sugar, butter, and buttermilk in another.
add the dry ingredients to the wet ingredients gradually while mixing with a hand / stand mixer.
Add the chocolate pieces to the batter, saving 1/4 to sprinkle on the top of the muffins.
bake for 20 minutes or until a tooth pick comes out clean. be sure not to mistake melted chocolate as runny batter as it will make your muffins dry.
